Harvest Cake

2 c. apples
1 c. sugar
1 ½ c. flour
pinch of salt
1 tsp. baking soda
2 eggs
½ c. cooking oil
¾ tsp. vanilla

¼ c. evaporated milk
¼ c. brown sugar
½ stick butter or margarine
½ c. coconut – optional

Chop apples coarsely – pour sugar over apples and stir completely; set aside.
Beat eggs slightly, add oil, vanilla. Fold in the flour that has been sifted with the soda and salt. Mix well, then blend in the apple mixture. Stir completely. Pour into a well-greased & flour 8×8 pan. Bake about 45 mins. In saucepan, melt butter and add cream and brown sugar. Boil for 3 mins., stirring constantly. Spread over cake and top with coconut.
