Loaded Potato Soup
2 T. butter
In a soup pot, melt butter over medium-high heat. Add celery and onion; sauté 5-7 mins. or until tender. Add chicken broth and potatoes. Cover and bring to a boil; reduce heat to low and simmer 20-25 mins. or until potatoes are tender. Combine flour, milk, salt & pepper and add slowly to soup until thickened and heated thoroughly, stirring constantly. Add cheese, bacon bits, scallions. Stir until cheese is melted. Serve immediately.
