Mango Bread

2 c. flour
1 ½ sticks butter
2 tsp. baking soda
1 ¼ c. sugar
2 tsp. cinnamon
1 tsp. vanilla
1/2 tsp. salt
3 eggs
2 c. chopped mango
1/2 c. coconut
1/4 c. walnuts

Cream butter, sugar and eggs. Then add dry ingredients and vanilla. Mix in
mango, coconut and walnuts by hand. Batter will be lumpy and wet.
Grease 2 bread pans or a bundt pan and bake at 350 degrees for 1 hr. Cool for 15 minutes and invert. This bread freezes well.
