Moist Chocolate Coca Cola Cake

3 c. flour
1 tsp. baking soda
1 tsp. salt
6 T. Hershey’s cocoa
2 c. sugar
1 (12 oz.) can Coca Cola, divided
2/3 c. Canola oil
2 T. vinegar
1 tsp. vanilla
2 c. miniature marshmallows

Sift or whisk all dry ingredients into large mixing bowl. Measure 6 T. Coca Cola into 2-qt. saucepan. Pour remaining Coca Cola into a 2-c. measure; add water to make 2 c., then adding vinegar and vanilla. Make a well in center of dry ingredients – pour in water mixture and oil – beat until well mixed. Stir in marshmallows. Pour into a 13×9 greased and floured pan. Bake at 350 degrees for 45 mins. to 1 hr.

To Coca Cola in saucepan, add 1 stick margarine or butter, 3 T. Hershey cocoa; bring just to boiling. Take off heat, stir in 1 pound confectioners sugar and 1 tsp. vanilla and beat until smooth. Stir in 1 c. chopped walnuts. Cool cake 30 minutes and carefully pour on topping.
