Raisin Cookies

2 c. raisins
1 c. water
1 c. shortening
1 ¾ c. sugar
2 lg. eggs
1 tsp. vanilla
3 ½ c. flour
1 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
½ tsp. cinnamon
½ tsp. nutmeg
1 c. chopped pecans or walnuts

Combine raisins and water in a med. saucepan; bring to a boil for 3 mins. Cool. Do not drain. Beat shortening at med. speed until fluffy; gradually add sugar, beating well. Add eggs and stir in raisins with liquid and vanilla. Combine flour and next 5 ingredients; gradually add to raisin mixture, stirring after each addition. Stir in pecans. Drop dough by teaspoonful two inches apart onto well-greased cookie sheet. Bake 375 degrees for 10-12 mins. or until browned. Cool on wire racks. Cookies will be soft. Yield: 5 dozen
