Slow Cooker “Sweet-Spiced Sweet Potatoes”

2 lbs. sweet potatoes, peeled and cut into ½ in. pieces
¼ c. dark brown sugar packed (or Splenda Brown Sugar)
1 tsp. ground cinnamon
½ tsp. ground nutmeg
Dash of salt
2 T. butter (margarine) cut into 1/8-in. pieces
1 tsp. Vanilla

Combine all ingredients except butter and vanilla, in the slow cooker; mix well. Cover and cook on LOW 7 hours or cook on HIGH 4 hours. Add butter and vanilla; stir to blend and serve. Note: I found it takes less time on High about 3 hours, so check to see if the potatoes are done.
