Zucchini & Pepperoni Casserole

Serves 4

1 med. zucchini squash – diced
2 T. bacon grease
½ lb. bacon, fried & crumbled
½ tsp. salt
¼ tsp. pepper
½ tsp. dried basil
½ tsp. dried oregano
½ lb. spaghetti cooked, drained
¾ c. onion, sliced in rings
20-24 pepperoni slices
½ jar (26 oz.) Marinara Sauce
6 oz. Mozzarella cheese, shredded
½ c. Parmasan cheese, grated

Preheat oven 350 degrees. Layer bacon grease, diced zucchini and sprinkle bacon in a 8×8 casserole dish. Mix salt, pepper, basil & oregano and spread evenly over top, followed with a layer of well drained spaghetti, onion and pepperoni. Pour sauce over top and sprinkle cheeses. Bake 30-40 minutes.
